Jollof rice is one of the most common dishes in Western Africa, consumed throughout the regions of Nigeria, Senegal, Ghana, Sierra Leone, Gambia, Togo, Liberia, Mali, Ivory Coast and Southern Cameroons. The name Jollof derives from the name of the Wolof people.
